Ingredients

  • 2 tablespoons oil or ghee

  • 1 medium onion, finely chopped

  • 3–4 garlic cloves, minced

  • 1 tablespoon fresh ginger, grated

  • 1½ teaspoons ground cumin

  • 1½ teaspoons ground coriander

  • 1 teaspoon garam masala

  • 1 teaspoon paprika

  • ½ teaspoon turmeric

  • ¼ teaspoon cayenne pepper

  • 1 tablespoon tomato paste

  • 1 can (14 oz / 400g) crushed tomatoes

  • ½ cup heavy cream

  • Salt to taste

  • Fresh cilantro

  • Water or stock as needed to adjust consistency

Directions

  • Heat oil or ghee in a large pan over medium heat.
  • Sauté onions for 5–7 minutes until soft and golden brown.
  • Add the garlic and ginger, and cook for 1–2 minutes until fragrant.
  • Stir in the spices: cumin, coriander, garam masala, paprika, turmeric, and cayenne pepper. Cook for 1 minute, stirring constantly to toast the spices.
  • Add the tomato paste and cook for 1 minute to deepen the flavor.
  • Pour in the crushed tomatoes, stir well, and bring to a simmer. Let it cook for 10–15 minutes, stirring occasionally, until slightly thickened.
  • Reduce the heat and stir in the heavy cream. Simmer for another 3–5 minutes until creamy and smooth. Add a splash of water or stock if the sauce is too thick.
  • Season with salt to taste. Blend the sauce with an immersion blender for a smoother texture.
  • Garnish with fresh cilantro, and serve hot with grilled chicken, paneer, or vegetables.
