  • 12 oz penne pasta

  • 1 tablespoon olive oil

Directions

  • Bring a large pot of salted water to a boil. Add the penne and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet over medium heat, add a splash of olive oil. Sauté 2–3 cloves of minced garlic for about 30 seconds. Add 1 sliced red bell pepper, 1 small sliced zucchini, and 1 cup of sliced mushrooms. Cook for 5–6 minutes, until the vegetables are tender.
  • Stir in 1/4 teaspoon of red pepper flakes (optional), then pour in 1 cup of marinara sauce and 1/2 cup of heavy cream (or Greek yogurt for a lighter version). Stir to combine and bring to a simmer.
  • Add the cooked penne to the skillet. Toss everything together until the pasta is well coated in the sauce.
  • Stir in 2 cups of fresh spinach and cook until wilted, about 1–2 minutes. Turn off the heat and mix in 1/4 cup of grated Parmesan cheese.
