Mung Bean Noodles Recipe with Bacon

Ingredients

  • 100g mung bean noodles (glass noodles or cellophane noodles)

  • 4-5 strips of bacon, chopped

  • 2 cloves garlic, minced

  • 1 tbsp soy sauce

  • 1 tsp sesame oil

  • 1 tsp chili flakes

  • 1 green onion, chopped

  • 1/2 tsp sugar

  • Salt & pepper to taste

Directions

  • Soak the noodles: Throw the mung bean noodles in a bowl of warm water and let them soak for 10 minutes, or until they’re soft. Drain them and set aside.
  • Cook the bacon: In a pan over medium heat, cook the chopped bacon until it’s nice and crispy. Don’t drain the grease — it’s flavor!
  • Add garlic: Toss in the minced garlic and sauté for like 30 seconds until it smells amazing.
  • Add noodles & sauce: Throw in the soaked noodles. Then add soy sauce, sesame oil, sugar, chili flakes, salt, and pepper. Mix it all up so the noodles get coated and heated through.
  • Finish it off: Top with chopped green onions and give it one last mix. Done!

How to Serve

Serve it hot, straight from the pan. You can top it with more chili flakes, a fried egg, or even sesame seeds if you’re feelin’ fancy.

How to Save Leftovers

Let the noodles cool, then toss them in an airtight container. Keep them in the fridge for up to 3 days. To reheat, just throw them in a pan with a tiny splash of water or microwave for about a minute. Boom—good as new.
