1. Prepare the potatoes:
While preparing the potatoes, preheat the air fryer to 400°F for five minutes. Use a fork to pierce each potato several times. Next, lightly cover each potato on all sides using some of the oil.
Place the potatoes in the basket of the air fryer so that they are not in contact with one another. The skins will become crispy as a result.
2. Air Fry:
Fry the potatoes for about 30 minutes, or until a knife can easily pierce the middle of them. After that, let them cool in the basket.
3. Scrape Out the Potato Boats:
Slice each potato in half along the length as soon as it is cool enough to handle. Scoop out the tender centers with a spoon, leaving a ¼-inch potato border adjacent to the skin.
Don’t throw away that potato flesh; it can be used in a variety of ways, such as salads or soups. I prefer to create lazy mashed potatoes by mashing them with herbs and Greek yogurt.
4. Oil and Season:
Combine the rest of the oil and pepper (or any other seasonings you choose; occasionally we’ll use Old Bay or seasoned salt or garlic powder) in a small bowl. Add salt and pepper to the potatoes after brushing them with oil on both sides.
5. Crunch the Skins:
Put the potato halves in the pan with the skins looking up and the middles facing down. Air fry for 5 minutes @ 400°F (simply throw them in the air fryer without reheating it).
6. Add Fillings:
Turn the skins over and stuff every one with cheese and any additional ingredients you choose, such as leftover taco toppings or buffalo sauce.
I put some salsa, vegetables, and beans on top of some of our skins since we had to finish them.

Lower the air fryer’s temp to 370°F, add the pieces with skins, and continue to air fry for an additional three to five minutes, or until the cheese is bubbling and melted. Add sliced green onions and dollop of soy sauce or plain Greek yogurt on top. Then get started.

- Add sliced green onions and drop of soy sauce or plain Greek yogurt on top. Then get started.
Few Tips Here!
- Apply the AIR FRY setting on toaster ovens. We have discovered that baking potatoes at 375°F produces somewhat better results. Simply raise the temperature if the potato slices are taking extra long to cook, but the period of cooking should remain the same. To collect any greasy or cheesy drips, lay a pan underneath while using a basket
- Get Started With Microwaved Potatoes: Use a fork to poke the potatoes all over, then microwave for 8 to 10 minutes, turning them over after 4 minutes, until they are soft. Until they are sufficiently cool to handle, set them away. Next, move on to Step 4, being careful to scoop out the potatoes gently because the skin will be more delicate.
