Chicken and Cheese Jalousie Recipe

INGREDIENTS

  • One tablespoon of olive oil
  • Three (195g) finely chopped rindless bacon slices
  • One 200g little piece of finely sliced leek
  • One cup (160g) of grilled chicken, 125 grams of blue cheese, and roughly chopped
  • Two puff pastry sheets
  • One egg, gently beaten

METHOD

1. Preheat the oven to 220°C (fan forced at 200°C). Use baking paper to line the oven tray.

2. In a large frying pan, heat half the oil over high heat and cook the bacon until it crisps. Use paper towels to drain.

3. In the same pan, heat the remaining oil over medium heat. Cook the leek for five minutes, stirring, or until it is soft.

4. Put the chicken, cheese, leek, and bacon in a big bowl.

5. Make two rectangles out of each pastry sheet, one slightly bigger than the other. On the tray, arrange the smaller rectangles. Make sure to leave a 1cm (½-inch) border around the chicken mixture. Lightly brush the edges with egg.

6. Gently fold larger rectangles of pastry in half lengthwise. At 1-cm (½-inch) intervals, cut through the folded pastry edge, leaving a 1-cm (½-inch) border. Place the cut pastry strip over the filling after carefully unfolding it. Press pastry edges together and lightly brush with egg.

7. Bake the jalousie until golden, about 25 minutes.
