Ingredients
200g (7 oz) pitted dates, chopped
300ml (10 fl oz) boiling water
1 tsp baking soda
85g (3 oz) unsalted butter, softened
150g (5 oz) dark brown sugar
2 large eggs
200g (7 oz) self-raising flour
1 tsp vanilla extract
Pinch of salt
200g (7 oz) dark brown sugar
100g (3.5 oz) unsalted butter
200ml (7 fl oz) double cream
1 tbsp golden syrup (or light corn syrup)
Directions
- Place the chopped dates into a heatproof bowl and pour over the boiling water. Stir in the baking soda and let it sit for 10 minutes to soften.
- Preheat your oven to 180°C (350°F). Grease and flour a 20cm (8-inch) round cake tin or individual pudding molds.
In a large bowl, cream together the softened butter and dark brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
Sift in the self-raising flour and add the pinch of salt. Stir gently until just combined.
Add the softened date mixture (with the liquid) to the batter and mix until well incorporated. - Pour the batter into the prepared tin(s) and smooth the top. Bake for 35-40 minutes (for a larger tin) or 25-30 minutes (for individual molds), until a skewer inserted into the center comes out clean.
- While the pudding is baking, make the toffee sauce. In a saucepan, melt the butter and dark brown sugar together over medium heat. Stir occasionally until the sugar dissolves and the mixture begins to bubble.
Add the double cream and golden syrup, then bring to a gentle simmer. Stir occasionally and cook for 5 minutes until thickened and glossy. Remove from the heat. - Once the pudding is baked, remove it from the oven and allow it to cool for a few minutes.
To serve, pour over some of the warm toffee sauce over the pudding. You can serve it with extra sauce on the side and, if desired, a scoop of vanilla ice cream or whipped cream.

FAQs
Q: Can I make this pudding ahead of time?
A: Yes! You can bake the pudding a day in advance and reheat it before serving. Warm the toffee sauce separately and pour it over just before serving.
Q: Can I use dates instead of other dried fruits?
A: Dates are essential for authentic sticky toffee pudding—they provide moisture and sweetness. Don’t substitute them!
Q: How do I prevent the pudding from being too dry?
A: Make sure to soak the dates properly and avoid overbaking. The toffee sauce also keeps the pudding moist.
Q: Can I make this recipe gluten-free?
A: Yes, substitute the flour with a gluten-free flour blend. Ensure all other ingredients are gluten-free as well.
Q: Can I reduce the sugar in the recipe?
A: The dates provide natural sweetness, but reducing the sugar in the sauce may affect its texture and flavor. For a less sweet version, use less sauce when serving.
